Finding dinnertime meals that are both delicious and healthy and take very little time is a goal for us all. This is especially important if you like to serve your family and/or friends variety time after time.
With this goal in mind, I went to work to find a great recipe for our evening meal. I thought about the cherries I had left over after I prepared the Cherry Chutney. We were enjoying new recipes using cherries, so I thought I’d use them with Tilapia since I had some fresh filets in the fridge. Tilapia is quite healthy offering Niacin, Phosphorus and Selenium, and it’s a very good source of Protein, Vitamin B12.
After checking out what I already had on hand, my new recipe was complete. It was a big dinnertime hit and was as good for lunch the following day. This recipe calls for wine. I used a Pinot Blanc from Santa Barbara, California. The reason I chose this specific wine was that I served it with dinner. You can use any Chardonnay or Sauvignon Blanc and there won’t be any noticeable difference.
If you love fish and tomatoes and some pretty tasty spices, you will surely love this dish. I plan to make it again before cherry season ends. Here you go:

Serve with Vegetables and Rice.
Cherry Chutney

So many cherries, so few exotic recipes! I’ve given our neighbors and friends a bunch of cherries from our harvest this past month. Yesterday, I decided to create something new. We’re getting a little tired of pies with cherries, pasta with cherries, etc.
I came up with a great recipe, one that can be frozen and used anytime of the year: Cherry Chutney. It was a great success at our BBQ last evening. Our family and guests loved it. One person became quite creative by spreading it on the chicken! Of course, we all had to try that…it was DELISH.
When we were finished, I placed the remaining chutney in glass jars and popped them in the freezer. I’m sure I’ll come up with more recipes for this scrumptious blend of exotic flavors.
Here’s the recipe (double the ingredients, if you plan to freeze some for later). If you come up with any great recipes of your own, please pass them along. We’d love to hear from you. In the meantime, ENJOY!
Ingredients
3 cups fresh cherries (pitted)
1 cup raisins
1/2 cup finely cut figs
1 juiced orange w/1 tbsp orange zest
1 cup chopped onions
2 tbsp fresh ground garlic
3 tbsp fresh ground ginger root
1/2 cup sugar
2 tbsp ground cinnamon
2 tsp ground nutmeg
Place all ingredients in a steamer until tender. Remove and add water from the steamer sparingly to your desired consistency. Mix well.
(You can also boil down these ingredients. We like to steam.)
Serve!
Always remember to add spices and flavors you and your family enjoy. In addition, you can add a bit of your favorite wine or cider vinegar to taste. Your additions will make the recipe more special and appealing.

Pasta PrimaCherry
We rolled out a new recipe last weekend at a birthday party for twins (5 yrs). We served 50 adults and 25 children. What a blast!
The menu included tea sandwiches, two hot dishes, four salads and Gabbie’s Garden™ fruit and veggie square meals.
Our Pasta PrimaCherry creation was a huge hit. Of course, everyone wanted the recipe before cherry picking season ends, so here it is!
Pasta PrimaCherry w/Chicken
Serving Size/Time Prep
Serves 4, Total Time 20-25 minutes
Ingredients
- 1 cup rigatoni, fusilli or rotini pasta uncooked
- 2 tablespoons virgin olive oil
- 1 cup broccoli florets
- 1 cup cauliflower
- 1/2 cup sliced carrots
- 1/2 cup fresh cherries halved
- 1 tablespoons chopped garlic
- 3/4 cup grated parmesan cheese
- 1 cup chicken or vegetable broth
- 1/4 cup basil, cut into thin strips
- 10 oz. cooked chicken strips (optional)
Cooking Instructions
- Cook pasta according to package directions reserving 1 cup cooking water before draining.
- Heat olive oil in large skillet over medium heat. Add vegetables and chicken strips, saute 2 minutes.
- Add garlic, cook 1 minute. Stir in chicken broth. Reduce heat, cover and simmer 3-4 minutes until vegetable are tender.
- Toss with drained pasta, parmesan cheese, fresh basil and cherries, using reserved cooking water as needed.
