Cherry Chutney

So many cherries, so few exotic recipes!  I’ve given our neighbors and friends a bunch of cherries from our harvest this past month.  Yesterday, I decided to create something new.  We’re getting a little tired of pies with cherries, pasta with cherries, etc.

I came up with a great recipe, one that can be frozen and used anytime of the year:  Cherry Chutney.  It was a great success at our BBQ last evening.  Our family and guests loved it.  One person became quite creative by spreading it on the chicken!  Of course, we all had to try that…it was DELISH.

When we were finished, I placed the remaining chutney in glass jars and popped them in the freezer.  I’m sure I’ll come up with more recipes for this scrumptious blend of exotic flavors.

Here’s the recipe (double the ingredients, if you plan to freeze some for later).  If you come up with any great recipes of your own, please pass them along.  We’d love to hear from you.  In the meantime, ENJOY!

Ingredients

3 cups fresh cherries (pitted)

1 cup raisins

1/2 cup finely cut figs

1 juiced orange w/1 tbsp orange zest

1 cup chopped onions

2 tbsp fresh ground garlic

3 tbsp fresh ground ginger root

1/2 cup sugar

2 tbsp ground cinnamon

2 tsp ground nutmeg

Place all ingredients in a steamer until tender.  Remove and add water from the steamer sparingly to your desired consistency.  Mix well.

(You can also boil down these ingredients.  We like to steam.)

Serve!

Always remember to add spices and flavors you and your family enjoy.  In addition, you can add a bit of your favorite wine or cider vinegar to taste. Your additions will make the recipe more special and appealing.
